Cocido is to the Madrileños what roast is to the British - the typical dish that you eat on a Sunday in the company of good friends and family.

INGREDIENTS

Serves 6
2 cups chickpeas (garbanzo beans) (approximately 300g)
2L of water
400g shredded beef
400g chicken
200g bacon pieces
1 ham bones
3 or 4 pieces of cooking chorizo
2 cloves of garlic
1 onion
2 carrots
1 leek
2 potatoes
1 bay leaf
Sprinkle of paprika
Olive oil and salt to taste

    METHOD

    Soak the chickpeas in cold water overnight or 12 hours before needed
    In a large pot, place the oil, soaked chickpeas, shredded beef, bacon, bones, garlic and onion. Bring to the boil.

    Remove any foam which has formed on top of the liquid. Boil gently for an hour then add the chorizo, carrots, potatoes and chicken. Continue cooking on a gentle boil for another hour.

    If you want a more substantial meal you can add noodles by separating the liquid from the other ingredients and boiling the noodles until cooked.

    Serve in a large bowl with some crusty bread.
